A colleague at work recently was married and we threw a bridal shower. I gave her a pair of pie pans, a gift certificate for $5, and the recipe that follows. She came into work today raving about the recipe! Her husband thinks she’s the best cook on the planet I told her to take all of the credit and since the recipe serves 8, he can have leftovers!
Golden Parmesan Potatoes
2 lb Yukon gold potatoes (about 8), cut into 1/8-inch-thick slices
3 tbs butter, melted, divided
1/2 cup grated Parmesan cheese, divided
Heat oven to 425°F.
Rinse potatoes. Pat dry with paper towels.
Brush 1 tbs butter onto bottom and up side of 9-inch pie plate. Toss potatoes with remaining butter and 1/4 cup cheese. Layer on bottom and up side of pie plate. Sprinkle with remaining cheese.
Bake 1 hour or until potatoes are tender. Loosen potatoes from side and bottom of pie plate. Invert immediately onto serving plate.
