This can be served as a main dish, with seasoned chicken or broiled tofu and a side of brown rice. Just saute another vegetable with the onion and garlic, like summer zucchini or red pepper!
3 tablespoon olive oil 3-4 cloves garlic, minced 2 small onions, minced Salt to taste 1/2 teaspoon each: allspice, oregano, basil 10 cups greens, (kale, collards, beet, mustard, etc. chopped 1/4 cup water or broth
Saute oil, garlic, onion for 5 minutes.
Add spices, salt, greens and water. Cover, and steam until greens are wilted, about 5 minutes. Serves 4. Per serving: 197 calories; 11 g fat (1.5 g saturated fat; 57 percent calories from fat); 22 g carbohydrates; 0 mg cholesterol; 144 mg sodium; 6 g protein; 4.5 g fiber.
