Gnocchetti with Arugula, Tomatoes, and Green Olives:036:
3 oz green olives
1 bunch arugula, trimmed
1/2 cup olive oil
3/4 lb tomatoes, coarsely chopped (can use canned if you don’t have a garden)
2 garlic cloves, finely chopped
pinch, red pepper flakes
3/4 lb pkg gnochetti
salt, to taste
Chop olives. Chop arugula. In a serving bowl, combine the arugula, olives, and other sauce ingredients.Let the mixture marinate for up to 30 minutes, or while you cook the pasta. Cook the pasta according to directions and drain. Add 1/2 tsp of salt to the arugula sauce, or season to taste.
Toss the pasta in the bowl with the sauce, and serve immediately. 4 servings = about 650 calories. - October 22, 2009 at 1:17 am #425781Happytosave

oh it is quick and easy! I love using ‘salad’ veggies with pasta. it’s like a warm pasta salad, which is kinda good at this time of year;-)
