      Sea Foam Candy

      1 3/4 cups light brown sugar
      3/4 cup granulated sugar
      1/4 cup light corn syrup
      1/4 tsp. salt
      2 egg whites
      1 tsp. vanilla
      1/2 cup chopped pecans (opt.)

      Butter sides of two-quart saucepan. Combine sugars, corn syrup, salt and 1/2 cup water. Cook, stirring constantly till sugars dissolve and mixtures come to boil. Cook to hard ball stage (260 degrees) without stirring. Remove from heat. Immediately beat egg whites until stiff peaks form. Pour hot syrup in a thin stream over beaten egg whites, beating constantly at high speed with electric mixer. Add vanilla, continue beating till mixture forms soft peaks and begins to lose its gloss, about 10 minutes. Stir in nuts. Let stand about two minutes. Drop by rounded teaspoons onto wax paper.

      Makes about 2 to 3 dozen pieces.

      My mom used to use a little green food coloring to make them sea green in color.
