      Gazpacho Salad
      1-1/2 cups sliced celery
      15-oz can black beans, drained and rinsed
      4 plum tomatoes, sliced
      1 yellow bell pepper, chopped
      1/2 cup salsa
      3 tbs light sour cream
      1 tbs lemon juice
      butter lettuce leaves
      Combine celery, black beans, tomatoes and peppers in salad bowl. In small bowl, combine salsa, sour cream and lemon juice. Pour over bean mixture and toss.

      Serve over lettuce. Serves 4
