Garlic Rub Seasoning
40 cloves garlic, minced
1/3 cup tbs black pepper
1/3 cup tbs paprika
1/3 cup tbs brown sugar
1/3 cup tbs coarse salt
Mix all ingredients together in a bowl (A mortar and pestle works well if available.). Using a potato masher, grind the seasonings into the garlic. Pour into a jar or storage container and store in the refrigerator for up to two weeks. Or place in a freezer baggie and store in the freezer.
This makes enough to coat two or three whole chickens, four or five rib racks, and six or seven pork chops/steaks.
Rub into the meat before cooking and let it rest for a few minutes. Then gently shake any excess off before putting it in the pan or on the grill.
