Awesome Garlic Parmesan Sweet Potato Fries- one of my favorite dirt cheap side dishes that goes great with just about anything, meat, fish, poultry, etc.
2 lbs of sweet potatoes – wash & cut into fries, don’t peel
2 tablespoons olive oil
ΒΌ teaspoon sea salt
2 tablespoons flat leaf parsley (chopped)
1 garlic clove (finely minced)
4 tablespoons Parmesan cheese (grated)
Preheat oven 450F
Drizzle the cut potatoes with oil, toss to coat. Spread them in an even layer on the cookie sheet, then lightly season with salt.
Cook 20 minutes, flip them, cook another 15-20 minutes. While they’re baking, in a bowl combine garlic, parsley and parmesan.
Add the sweet potato fries and give them a good toss in the herbs and cheese.
Plate the sweet potato fries and serve them immediately.
