having trouble getting the kids to eat carrots, zucchini, and/or bell peppers? well, next time you prepare these veggies, shred and chop enough for the following recipe and serve as a side dish on the following day. they will eat and and want more;-)
Garden Salad
8-oz pkg lemon-flavored gelatin
1/2 tsp salt
2 tbs lemon juice
1 cup shredded carrots
1 cup shredded zucchini
1/2 cup chopped red or green bell pepper
2 tbs finely chopped onion
Prepare gelatin according to directions and add lemon juice.
Refrigerate 1-1/2 hours. Stir in vegetables. Spoon into 5-cup mold sprayed with cooking spray.
Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin in refrigerator.
4 servings.
