      1 1/4 cups all-purpose flour
      2 Tbs nonfat dry milk powder
      1 Tbs sugar
      1 tsp baking powder
      1/8 tsp salt

      Mix all together. Store in airtight container in cool place.
      Yield: 1 1/2 cups mix

      To Serve: Heat about 1/2 inch vegetable oil in a large skillet over medium heat. In a medium bowl, combine mix, 1 cup lemon-lime soft drink, & 1 egg; beat until well blended. Cover end of funnel with finger.

      Hold funnel over skillet & pour about 1/2 cup batter into funnel. Remove finger from funnel &, beginning in center of skillet, release batter in a circular motion toward outside of skillet. Using 2 spatulas to turn, fry funnel cake about 1 minute on each side or until golden brown.

      Drain cake on paper towels. Sprinkle with confectioners sugar. Repeat with remaining batter.

      Serve warm.

      Yield, about 7 funnel cakes
