I make a very simple dish I call Mexican Lasagna:

1 package corn or flour tortillas (I prefer the corn)
      1 jar salsa
1 pound ground meat (hamburger or turkey)
      shredded Mexican cheese

I spread a little of the salsa on the bottom of a round baking pan,
then place 1 tortilla on top (I buy ones that are almost exactly the
size as the bottom). Mix 1/2 jar of salsa with the ground meat and
spread 1/2 of this on top. Sprinkle on some cheese. Repeat layers
ending with the plain salsa and cheese on top. Bake at 350* until
      warmed through.

I wish I could be more precise with this recipe. I made it up and
just put a little of this and a little of that so to speak. I make 2
of these at a time and freeze the other one for another week. This
feeds 2 of us well for dinner with some leftover for lunches the next
      day. Kim in MI
