Need just two cupcakes or muffins? No need to measure 1/3 or 1/6 pf an egg or a small fraction of a teaspoon of vanilla. Just make up the entire recipe and freeze.
The batter can be frozen in freezer/containers/ bags or even in muffin pans. You can thaw in the refrigerator and bake as usual. If using in a muffin pan, you can even bake frozen, just add about 15 minutes to the baking time.

You can use your muffin tins as “muffin cube trays”, simply fill them as full as you normally would for muffins, freeze and then run hot water over the bottom of the tin of frozen muffin batter for a few seconds to loosen them. Pop the frozen batter cubes into a vacuum seal bag and seal or use a ziploc. Then you have less room being used in your freezer until you’re ready to bake your muffins. 🙂 - August 27, 2013 at 10:15 pm #443040
