Frozen cranberry salad
1 lb fresh cranberries
1 (16 ounce) bag mini marshmallows
2 cups sugar
2 1/2 cups crushed pineapple, drained
16 ounces Cool Whip
Grind up cranberries.
Mix cranberries, marshmallows and sugar and let stand overnight.
Mix cool whip into cranberry mixture and put into a 9×13 pan. Freeze
overnight.
Serve as desert, cut in squares on a bed of pretty greens.
Cabbage Ramen Salad – from the “Best of Mennonite Fellowship Meals”
cookbook. I do a couple things differently than the cookbook – but
the ingredients are basically the same.
Salad:
1/2 head cabbage, shredded (I usually buy a package of slaw mix)or
can use Chinese cabbage.
2 T sesame seeds
2 T sunflower seeds
1/2 cup slivered almonds
4 green onions, chopped
1 pkg ramen noodle soup (I use chicken or oriental)Reserve seasoning
packet for dressing. (I like to toast the noodles after they
Dressing:
1/2 Cup cooking oil (I use canola)
3 T sugar
3 T vinegar (I use balsamic or cider or red wine)
1/2 t soy sauce
1/2 t pepper
packet of soup flavoring
Crunch up the dried ramen noodles. Combine all dressing ingredients
Combine all salad ingredients – add noodles and dressing. Toss and
serve.
I cheated on the cheesy chicken and rice casserole. I purchased it
from an Amish lady that makes dishes up and sells from her home. I
also purchased homemade dinner rolls from her to add to the meals.
