After everyone eats their watermelon, peel the rhine from the white of the melon and slice into cubes. Soak the rhine in salt water over night. Make an egg and milk batter, dip melon in the batter and then into flour or bread crumbs, repeat. Drop breaded melon in hot oil, turning several times until completely fried all the way and golden brown. Take out of oil, and place on a paper towel until the oil is obsorbed then salt and pepper, and eat. It makes a great breakfast meal with eggs, bacon, ham and even sausage. Serve hot!
