This is an authentic Mexican recipe and is so delicious!
Ingredients:
Corn tortillas
Mashed potatoes (can be the boxed kind, or the made from scratch, which ever you have on hand or is cheaper.)
Vegetable oil for frying
Lettuce, shredded
Salsa (homemade or store bought, to taste)
Salt
Mayonnaise and Parmesan Cheese, optionalMake up mashed potatoes, they should be a little on the thicker side. Heat up tortillas until pliable, put a small spoonful of mashed potatoes in the middle of each tortilla and fold in half. Heat oil in a skillet, pan fry the potato tacos on each side until golden.
Drain on paper towels. To eat, gently pry open each taco and fill with shredded lettuce, sprinkle with a little salt, salsa and Parmesan cheese if desired. You can also spread a little mayo inside before the lettuce if you desire.
Serve and enjoy!
