      Fresh Peach Glaze:118:
      2 lb fish steaks — tuna, salmon, or other firm-fleshed fish suitable for grilling
      3 large ripe peaches, pitted, diced or 3 cups sliced frozen peaches, thawed
      1/4 cup packed brown sugar
      1/4 cup fresh orange juice
      1 tbs grated orange peel
      2 tbs minced crystallized ginger
      1 green onion, chopped
      3 tbs dry white wine
      3/4 tsp curry powder
      In medium saucepan, combine peaches, brown sugar, orange juice, orange peel, ginger, onion, wine and curry powder. Mix until well blended. Heat over medium heat. Simmer 20 minutes, stirring often. Transfer mixture to food processor. Process until smooth. Brush mixture over hot, grilled fish occasionally during last 5 minutes grilling time. 4 servings = abut 130 calories.
      this gives the fish a ‘shiny’ exterior and tasty finishing flavor…definitely a wow! even if I do say so myself! LOL!
