Fluffy German Pancake
3 eggs1/2 cup milk
1/2 cup flour
1 tsp vanilla
1/4 cup sugar
1/4 tsp salt
2 tbs butter
Preheat the oven to 450°.
Beat the eggs and milk together with a whisk until smooth.
Add the flour, salt sugar, and vanilla into the egg mixture and whisk until there aren’t any lumps, but be careful not to over mix.
Place 2 tbs of butter in a cast-iron skillet. Place the skillet in the oven to melt the butter.
When butter is melted, swirl it in the pan to evenly coat the surface. Make sure to use a pot holder!!
Then pour the batter into the skillet. Bake on the middle rack for about 15 minutes until fluffy and not jiggly. Make sure to move the other oven racks out of the way of the pan.
This pancake gets very puffy!
Sprinkle with powdered sugar, cinnamon sugar, maple syrup or fresh fruit!
Slice it like a pie and serve individual slices! This makes one big pancake, but it is enough to feed 2-4 people depending on what it is topped or served with. When DD was a wee thing, I’d make it on Saturday with traditional pancake toppings.
Then on Sunday, I’d microwave for 30 seconds and ‘sandwich’ it with fresh berries or sliced bananas and maybe top it with maple syrup. The ‘banana’ sandwich with maple syrup for dipping was our favorite…occasionally peanut butter would come into use;-D
