Flourless Banana Mish-Mash Muffins
1 1/2 cups rolled oats
1/2 cup wheat bran
1/4 tsp salt
1/4 cup applesauce
1/4 molasses
1/4 coconut
2 bananas
1 tsp vanilla
1 tbs powder
1 egg
Preheat oven to 350 degrees F. Grease muffin tins, or use muffin liners.
In large bowl, combine applesauce, 1 egg, molasses, bananas, and vanilla until smooth. Add cinnamon if desired.
Mix in oats, bran, baking powder, and salt. Fold in coconut. Fill muffin liners halfway with batter.
Sprinkle with sugar or sugar substitute on top if desired.
