Figs with Marscapone and Smoke Chocolate Ganache
12 figs, cut in half lengthwise
1/3 cup mascarpone
for ganache recipe, see instructions
Preheat grill for medium heat. Wash and cut figs in half. Very carefully thread 3-4 fig halves onto skewer.
Place cut side down onto grill grate and cook for 2 minutes or until grill marks appear. Do not overcook or figs will become mushy. Remove from grill and allow figs to cool for a few minutes.
Remove from skewers and arrange over chocolate ganache. Top with mascarpone and fresh mint leaves.
1 1/2 cups cream
3/4 cup semi sweet chocolate chips
1 small skillet
cherry, apple, or persimmon wood chips
Prepare charcoal grill or smoker for a 30 minute smoke. Pour cream into skillet, add chocolate chips, and place away from the fire.
Add wood chips at this point. Close lid, and let smoke for 15-30 minutes. Add extra smoke chips if necessary.
Check after 10-15 minutes to make sure ganache hasn’t burned and to stir mixture. If extra cream is needed at this point, add it. Once the chocolate and cream are incorporated, remove from smoker, allow it to cool for at least 10 minutes, before using.
While you can smoke the ganache for 30 minutes, most of the flavor is infused within the first 15-20 minutes.
Yeah, this is a bit of work…but so worth it! LOL!
