It’s that time of year again when we make hearty and warm dishes for potlucks… Fiery Corn and Ground Beef Chili 2 14.5-oz cans black beans drained and rinsed 1 lb ground beef 1 tbs olive oil 1 chopped onion 2 chopped garlic cloves 1½ tbs chili powder 2 tsp oregano ½ tsp red pepper flakes 15-oz can tomato sauce 3 cups fresh or canned corn kernels 1 chopped chili pepper 1 cup water 1 tbs cilantro Brown the ground beef in a medium skillet.
Add tomato sauce, water and corn and let simmer for 10 minutes. In a large soup pot, heat olive oil over medium heat. Add onion, chili pepper, garlic, chili powder, oregano, red pepper flakes and stir.
Pour the beef mixture into the pot and add in cilantro. Bring the complete mixture to a boil. Reduce to a simmer and cover for 5 minutes.
