Fettuccine with Creamy Zucchini Sauce:bounce:
1 lb fettuccine
4 tbs butter
1 lb zucchini, trimmed and shredded
1 small onion, grated
1 cup cream
3 tbs Parmesan
pinch of nutmeg
salt and pepper, to taste
Melt the butter in a dep, large skillet. Add the shredded zucchini and onion. Stir and saute until the onion is wilted, about 4 minutes.
Cover the pan and saute for 3 minutes longer, until soft. Stir in the cream and allow it to come to a gentle simmer. Remove the pan from the heat and stir in the Parmesan, nutmeg, salt and pepper to taste.
Meanwhile, cook pasta according to directions. Drain the pasta and add to the skillet with the sauce, toss all together, and serve immediately. 4 srvings = about 660 calories.
this really is a nice change of pace, especially when you get the zucchini from the mark-donw bin;-)
