My kids used to love eating these for breakfast when they were little.
You’ll Need:
2 cups rolled oats
3 large overripe bananas, mashed
1/2 cup peanut butter
1/4 cup chocolate chips
Preheat Oven to 350F.Line a cookie sheet with parchment paper or a silpat and set aside.
Mix all ingredients in a large mixing bowl until fully combined. Stir in chocolate chips, if using.
Using a cookie dough scoop, form 8 even sized balls. Gently press down on the balls to flatten slightly.
Bake for 10-12 minutes, until slightly golden on the edges. Remove from the oven.
For complete cooling, place the cookie sheet on a wire rack and allow to cool for 10 minutes. It may be necessary to add a bit more oats to the recipe if the dough is too thin. Sometimes the banana is bigger than expected. You can add chopped nuts too if you prefer.
