Here’s a recipe that I saved and adapted from Kraft, it’s called the Farmers Market Corn Toss.
The jalapeno is optional but adds a really nice kick. If you want to add even more flavor, crumble a couple strips of cooked bacon on top. Not necessary, but oh so good!
1 small sweet vidalia onion, chopped
1 red bell pepper, chopped
2 ears corn on the cob, kernels removed or 1 bag Organic Whole Kernel Corn
1 Medium zucchini, sliced
1/4 cup chopped fresh parsley
1/4 tsp. black pepper
1/4 cup Parmesan Cheese, divided
1 jalapeno, seeded, chopped fine
How to Make It
HEAT oil in large skillet on medium heat. Add onions and red peppers & jalapeno (optional), saute for 3 min, stirring occasionally. Add in corn and zucchini; cook and stir 5 min.
or until all vegetables are crisp-tender. Remove from heat.
Add parsley, black pepper and 2 Tbsp. cheese, stir to combine all flavors.
TOP with remaining cheese.
