Elvis-Style French Toast Casserole
non-stick cooking spray
1-1/4 cups whole milk
2 cups whipped topping
1 cup granulated sugar
1 tbs vanilla extract
6 egg
4 egg yolk
1 tsp ground nutmeg
1 tsp ground cinnamon
3 ripe bananas, mashed
1 loaf French bread, cut into cubes
1/2 cup creamy peanut butter and honey spread
1-1/2 cups milk chocolate morsels
Preheat oven to 375°. Spray 13×9-inch baking dish with cooking spray.
Whisk together milk, whipped topping, vanilla extract, sugar, whole eggs, egg yolks, nutmeg, cinnamon and mashed bananas in a large bowl until smooth.
Place bread cubes in baking dish. Pour milk mixture over bread cubes, mixing gently to ensure all bread cubes are covered.
Place peanut butter in a small microwave-safe bowl and microwave on high for 30 sec, until melted. Pour peanut butter evenly over bread mixture.
Bake 35 to 40 min or until casserole is set. Immediately sprinkle with chocolate morsels.
Cool 5 to 10 min. Serve with additional whipped topping. Serves 10
