      scrambled eggs and vegetables

      2 tablespoons butter
      2 tablespoons chopped onion
      1 small zucchini, diced small
      2 tomatoes, skinned and diced
      8 eggs
      14 cup cream
      Salt and pepper

      Heat butter in fry pan; add onion and zucchini’; cook till tender.
      Add tomatoes, salt and pepper; cook for 3-4 minutes.
      Beat eggs, add cream and mix.
      Pour eggs in fry pan with vegetables and cook.

      serve over buttered toast.

      makes 4 servings.
