Mediterranean Macaroni & Cheese
Left-over Eggplant Parmesan
16-oz can chickpeas, drained
1 pkg macaroni and cheese (or your own home-made cheese sauce and cooked macaroni)
Cut the left-over Eggplant Parmesan into cubes. Prepare macaroni and cheese. Gently fold in eggplant and chickpeas.
Heat thoroughly. If you normally make baked macaroni and cheese, carefully fold in the ingredients and bake as you normally would.
