Egg and Bacon Breakfast Casserole
4 to 6 slices bacon, diced
3 slices bread, lightly buttered
3 eggs, slightly beaten
1 cup milk
1/2 tsp salt
1/4 tsp dry mustard
1/4 tsp ground paprika
Cook bacon until browned. Cut bread into smaller pieces. In a lightly buttered deep casserole (1-quart size), make layers of bread pieces and bacon. Whisk together the eggs, milk, salt, mustard, and paprika. Pour over bread and bacon. Bake at 350° for about 40 minutes, or until puffy and a knife inserted in center comes out clean.
Serves 2.

It really is quick and easy! A friend of mine would double this recipe, prepare it first thing in the morning, cover it and shove it in the fridge. She’d take it out as soon as she got home and after she did her ‘thing’ around the house, she’d shove it in the oven. Her family of four liked it so much, that it was a monthly dinner on Fridays when she was worn out from teaching 3rd graders all week
Ever so often she would shake things up by using cooked crumbled sausage or leftover minced ham instead of bacon. Do ya think that she was a morning person to get this going for dinner?!! LOL!!!

So I tried this recipe and nobody in my family liked it. 🙁 Either I need to find something better to use then bread bec the bread was kind of soggy. Any suggestions? I was thinking mybe a biscuit but not sure. -

Ouch! I hate that your family didn’t like it!! Did you bake it long enough? Have you checked your oven to make sure that it is functioning at the right temperature? A friend liked it so much on a date night with her DH has made it (by doubling the recipe) a monthly breakfast-for-dinner plan for her family of four. Please let us know what you determine…
