      Eating healthy & Cheaply isn’t as difficult as you might think. The key is to take something that could be considered bland and add some KICK.

      Chipotle~Lime~Garlic Gold & Green Cauliflower

      2 cups cauliflower (any color will do– yes, you can getvarious colors of cauliflower!)
      2 Tbls malt vinegar or vinegar of choice– my favorite is Rice Vinegar- but I tend to use whatever I have on hand
      Juice of 1/2 lime
      1/8 tsp dried chipotle flakes (or hot pepper flakes)
      1 clove minced garlic
      2 tbls chopped freshcilantro (or you can use dried, but alter the amount!)

      Cook cauliflower.

      In a saucepan heat vinegar, lime juice and chipotle flakes on medium heat for about 5 minutes till flakes soften. Remove from heat. Add cauliflower, garlic and cilantro and toss.

      Chill at least one hour.

      This is a great side dish.
