Ingredients:
2 large (15oz) cans of yams, drained
2TBS orange juice
1/4 cup butter or margarine melted
3/4 cup packed brown sugar
1/2 tsp cinnamon
1/4 tsp pumpkin pie spice
1 (10.5 oz) package of mini marshmallows
Directions:
Drain yams and put into a large bowl with the orange juice, cinnamon and pumpkin pie spice. Mash by hand or with an electric mixer depending on the consistancy you prefer. Spread into a baking dish. Drizzle with melted butter and sprinkle the brown sugar evenly over the mixture. Last, pour the package of mini marshmallows on top.
Bake at 350 for about 30 minutes or until marshmallows are melted and a very light golden brown.
I normally make this (and most of the other side dishes for that matter) the night before and just pop it in the oven once the turkey is almost done. It’s so easy and it always gets polished off quickly.
