Pizza Pie
4 refrigerated flaky biscuits (1 oz. each)
2 T. olive oil
1/2 cup diced onion
1/2 cup diced green bell pepper
1/2cup tomato sauce
1/2 tsp. dried oregano
1/2 tsp. dried basil
dash of pepper
4 oz. mozzarella cheese, shredded
2 T. Parmesan cheesePreheat oven to 400 degrees. On a sheet of wax paper, place biscuits next to each other; cover with another sheet of wax paper and roll dough to form a circle about 8 inches in diameter and 1/8-inch thick. Remove paper and fit dough into 7-inch pie pan. Using fork, pierce bottom and sides of dough. Bake until lightly browned, 8 to 10 minutes. While crust is baking, in small non-stick skillet, heat oil, add vegetables and saute until soft. Add tomato sauce and seasonings and cook, stirring constantly until mixture thickens. Pour sauce over baked crust and sprinkle with mozzarella and Parmesan cheeses. Bake until cheese is melted and lightly browned, 10 to 15 minutes. Cut into wedges and serve.
