      Easy Meatloaf
      2 large eggs
      1 cup crushed Goldfish crackers
      1/2 cup shredded cheddar cheese
      1tbsp minced onions
      1 tsp kosher salt
      1/2 tsp freshly-ground black pepper
      1 lb lean ground beef (90%)
      1 lb ground pork
      1/2 cup ketchup
      1/4 cup brown sugar
      2 tbs horseradish mustard or Dijon mustard
      Preheat oven to 350 degrees F.

      Whisk eggs in a large bowl.
      Add the next seven ingredients (through pork). Mix well with your hands.
      Turn meat mixture out into a shallow baking sheet and shape into a loaf.
      Bake 30 minutes.
      Whisk together remaining ingredients. Spoon over meatloaf.

      Bake another 15-30 minutes until cooked through (the internal temperature should be 160 degrees F.).
      Let meatloaf rest 10 minutes before serving.
      Note: Meatloaf if one of my favorite meals and this is a great recipe to get your kids involved…what kid doesn’t love goldfish!!

      Interesting with the goldfish crackers. I will have to try this sometime soon!

      This is a great recipe to make with kids. Anyone with ‘picky’ eaters should make this recipe. I came up with this recipe when DD was very young and she said ‘meatloaf again?!!

      …Giggle…this was back when ground beef was less expensive than chicken! I decided to shake things up by using the goldfish crackers that she loved instead of breadcrumbs. We would crush the crackers and then she would decide how many ‘whole’ crackers to add and or top the meatloaf.

      She never, ever complained about eating meatloaf again and this is the only way that she prepares it today;-D
