      1 cup milk
      1 tablespoon vanilla extract
      1 cups sugar
      2 eggs
      3 cups baking mix (commercial or myo)
      1 teaspoon nutmeg
      1/2 teaspoon cinnamon
      canola oil-for frying
      1/2 cup jam
      powdered sugar

      1. Mix together milk, vanilla, sugar, and eggs. Set aside.

      In a separate
      bowl whisk together baking mix, nutmeg, and cinnamon. Stir into milk mixture.
      2. Heat oil to 350ºF.

      Drop the batter by tablespoon amounts into the
      hot oil and fry until golden and cooked through, flipping halfway through
      cooking time. Remove and drain on paper towels.
      3. Using a skewer or chopstick, poke a hole in the side of a fritter and
      twirl it around inside to create some space in the centre.

      Place jam in
      an icing/piping bag with a small round tip. Insert tip into hole and fill
      fritters with jam.
      4. Sprinkle fritters with powdered sugar and serve immediately.

      Makes: 2-3 dozen fritters
      *Can freeze fritters. Just place on a prepared baking sheet pan and heat through.
      NOTE
      Can make without the jam filling-just skip step 3, go to step 4.
      Both ways are quite tasty.

      These sounds so delicious! When I was a kid my mom used to make Corn fritters- which is made just about the same with (save for the jam) and used a can of drained corn instead. We ate them with maple syrup and boy were they ever good! It was one of those Absolutely bare bones pantry recipes that we had no idea was a “broke” food. Adding jam to fritters takes them to a whole new level of “OMG these are Good”! Thanks so much
