Tortellini with Spinach
1 (9-ounce) package cheese tortellini
2 tablespoons walnuts
1 tablespoon olive oil
5 garlic cloves, chopped fine
1 (6 or 8-ounce) package fresh spinach
1/3 cup grated Parmesan cheese
Pinch of black pepper
1/4 cup diced deli ham (optional)In a large pot of boiling, salted water, cook the pasta until al dente. Drain and keep warm in a large serving bowl.
Meanwhile, heat a nonstick skillet over medium heat for 1 minute. Add nuts and toast for 2 minutes, stirring.Add the toasted nuts to the pasta.
Heat the oil in the pan. Add the chopped garlic and cook for 2 minutes. Add the spinach and cook for 2 minutes or until it wilts, stirring occasionally.
Add the spinach mixture, along with the grated Parmesan, pepper and ham, to the pasta. Stir well. Serve hot.

OM! Yum I am a big fan of soups. I make homemade soups as much as possible, this recipe sounds wonderful!
