      Easy Beef Stew

      6 red potatoes
      1-1/2 lb beef sirloin tip, cut into 1″ cubes
      1/3 cup flour
      Optional: salt and pepper to taste
      14 -oz can diced tomatoes, un-drained
      2 cups beef stock
      3 cups frozen stir-fry bell peppers and onions

      Scrub the potatoes and cut each into quarters. Place the potatoes in the bottom of a 4-quart slow cooker.
      Mix the flour, salt, and pepper and toss with the cubed beef to coat. Add the coated beef to the crockpot. Add un-drained tomatoes and beef stock and stir gently.
      Cover the crockpot and cook on low for 7-8 hours until the beef and potatoes are tender. Add stir-fry vegetables. Cover the slow cooker again and cook on low for 30-40 min until the vegetables are hot and tender.​
      Thicken this by adding about a tbs or two of cornstarch or flour to about 1/4 cup of water or beef broth. Mix well until the flour has dissolved. Stir this mixture into the stew in the crockpot, cover, and cook on high for 10 to 15 min or until the stew has thickened. Serves 4-6
