When I was growing up every year on New Years Morning we would have these doughnuts. (Donuts)(We called them Donots)
2 cups Sugar
1/4 cup Butter (melted)
1 teaspoon Lemon Extract or 2 teaspoons Lemon Juice
7 1/2 cups Flour
6 teaspoons Baking Powder
2 teaspoons Salt
1 teaspoon ground Nutmeg or Cinnamon
1 cup Milk
Oil for deep frying
Sugar or Confectioners’ Sugar for coating (optional)
In a mixing bowl, beat eggs, sugar and butter. Add lemon and mix well. Combine the dry ingredients and add to the bowl a little at a time alternating with the milk.
Mix well each time. Cover with a lid or plastic wrap and refrigerate overnight.
Divide dough in half. Roll out one portion to 1/4 inch thickness. Cut with a floured 1 1/2 inch round cookie cutter or a small drinking glass.
Repeat with remaining dough. In an electric skillet or deep fryer, heat oil to 375 degrees F. Fry doughnuts for about 4 minutes or until golden brown, turning once with a slotted spoon.
Drain. Eat and Enjoy!
If you don’t like just plain doughnuts–Optional step: We always put sugar in a brown paper bag and dropped a few of the doughnuts into the bag, closed it by rolling the top down a little bit; and shook it to get the doughnuts coated. Others, put powdered (Confectioner’s) sugar on a plate or in a small bowl and rolled the doughnuts around in it to coat.
Makes about 8 dozen.
