Hi. Today I am trying to save about 10 ears of corn from the trash bin,
meaning, in the past I’ve bought too much of something and instead of using it I
have brought it to the point of rotting and then saying it was too bad I didn’t
use it. I am embarassed to say it was happening weekly.
So today I am making
that corn into corn chowder. It took some time to prepare but I’m feeling
really good about it. It’s an Emeril recipe.
I think we’ll have at least
enough to freeze one portion since I only had enough corn to cut the recipe in
half, and I didn’t know if anyone knew if it would freeze well. I’ll be adding
a cup of heavy cream and a cup of milk to the recipe just so you know.
Also, if I get brave and try clam chowder in the future, does anyone know if
that will freeze well or is it better not to freeze clams? Although I have seen
frozen clam strips at the grocery store.
