      Dijon-Thyme Roasted Salmon
      1 lb fresh salmon, skin removed
      2 tsp olive oil
      1/4 tsp kosher salt
      1 tbs Dijon mustard
      1/2 tsp dried thyme
      lemon wedges, for serving
      Preheat oven to 400°.
      Cut salmon into 4 equal sized pieces.
      Place pieces of salmon on a sheet pan lined with parchment paper.
      Brush each piece of salmon with olive oil and season with salt.
      Place fish in the oven and roast for 10 min.
      In a small bowl, mix Dijon mustard and dried thyme and set aside.
      After 10 min of cooking, brush salmon with mustard-thyme mixture.
      Return fish to the oven for 5 to 8 min more, or until salmon is just cooked through. Serves 4
