Curried Chex Mix 3 cups rice Chex 3 cups wheat Chex 3 cups corn Chex 2 cups pistachios 2 cups cashews 1/2 cup butter 1/3 cup olive oil 1-3 tbs curry powder 1 tsp ground ginger 1/8 tsp pepper Salt to taste, if desired Preheat oven to 250 degrees F. In large bowl, combine Chex cereals, pistachios, and cashews. In small saucepan, melt butter and olive oil.
Stir in half of the curry powder, all the ginger, the pepper, and salt, if using. Drizzle butter mixture over cereal mixture, tossing to coat. Then sprinkle remaining curry powder over all, tossing to coat. Place on large cookie sheet or jelly roll pan with sides.
Bake for 40 minutes, stirring every ten minutes, until toasted and fragrant. Cool on paper towels, then store in airtight container at room temperature.
