Crock Pot Orange Chicken is very inexpensive and simple to make, serve it over freshly steamed rice or with a salad for a complete meal.
In a Crockpot, Dump the Following ingredients in the order given:
1 lb. boneless, skinless chicken thighs (cut into bite size pieces)
3 T Coconut Oil
juice of 2 oranges
zest from 1 orange
1/4 C of Orange Juice
1 tsp fresh ginger, grated
3 Tbs Soy Sauce
2 Tbs sriracha
Chopped Peanuts (low or no salt) for topping
Stir it all up with a spoon.
Cook on low about 6 hours.
If you want to make your own Make-Ahead oamc (once a month cooking) fill the freezer meal- combine the ingredients into a gallon sized ziplock bags or in a Vacuum Seal/ Food Saver Bag.
(the time might vary according to your brand of slow-cooker, some cook at slightly higher temps, so be aware of how long it normally takes for your cooker to work to avoid under or over-cooking your food!!)
always spray your crockpot with non-stick spray before starting out to make clean up easier or line it with Crockpot liners.
