      Crème Bruleè Cheesecake
      Crust:1-1/2 cups graham cracker crumbs
      1/4 cup butter, melted and cooled
      1/3 cup sugar
      Filling:
      16 oz cream cheese, softened
      1/2 cup granulated sugar
      1 tsp vanilla
      2 whole eggs
      1 egg yolk
      Topping:
      1/2 cup brown sugar, packed
      1 tsp water
      Crust:
      Preheat the oven to 350 degrees F. Lightly grease an 8-inch square pan. Mix together the graham cracker crumbs, butter and 1/3 cup sugar.

      Press into bottom of prepared pan. Bake for 8 to 10 min. Cool slightly.
      Filling:
      While the crust is baking, beat the cream cheese, granulated sugar, and vanilla at medium speed with electric mixer until well blended.

      Next, add the eggs and egg yolk, mix until blended.
      Pour mixture into prepared crust in pan. Bake at 350 degrees F. for 40 min or until center is almost set.

      Refrigerate overnight or for at least 3 hours.
      Topping:
      Before serving, heat broiler, mix brown sugar and water, spread over cheesecake. Place on cookie sheet. Broil 4 to 6 inches from heat 1 to 1-1/2 min or until topping is bubbly.
