Creamy Potatoes, Corn, and Pepper Skillet
1 cup leftover potatoes (any kind, even mashed!)
4 tbs butter
16-oz pkg frozen corn
1 onion, chopped
1 bell pepper chopped
salt and pepper to taste
1/4 sour cream
Melt butter in skillet. Add onion and pepper. Saute over medium heat until crisp-tender.
Stir in corn and cook about 4 min. Add potatoes, stir, and cook until thoroughly heated. Salt and pepper to taste.
Add sour cream. If using mashed potatoes, may need to add a bit of milk or water to get desired consistency which is a ‘creamed’ dish.
Note: Whether you are using leftover baked, boiled, mashed, or roasted potatoes, this is a fabulous dish! You just may have to adjust the liquid to get creamy texture if using mashed potatoes.
