Creamy Pesto Pasta
3/4 cup fresh basil leaves, packed
3/4 cup grated Parmesan cheese, divided
3 tbs pine nuts
2 cloves garlic, peeled
1/2 tsp salt and pepper, each
1/3 cup oil
1/2 cup heavy cream
2 tbs butter
1.5 cups leftover pasta (any kind), warmed in the microwave for a few minutes
In a food processor or blender, add the basil, 1/2 cup Parmesan cheese, pine nuts, salt, and pepper. Blend while slowly adding in the oil. In a saucepan, combine the butter and cream over medium heat. Pour in the pesto, stirring to combine, and let it simmer for 2 to 3 minutes. Turn off the heat, add the remaining cheese, and stir until melted. Add in the pasta and gently mix together.
