Creamy Lemon Chicken Thighs
2 lb boneless, skinless chicken thighs
1 tbs olive oil
1 tbs butter
1/2 yellow onion, diced
2 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp salt
1/8 tsp pepper
1.5 cup chicken broth
1 tsp grainy mustard
3/4 cup heavy cream
1 tbs lemon juice
1 tbs cornstarch
Sprinkle each side of chicken with Italian seasoning, salt and pepper.
In a large skillet over medium-high heat, melt butter with olive oil, add onion and garlic and saute for about 2 min and then add seasoned chicken thighs.
Sauté for about 2-3 min on each side until nicely browned.
Transfer contents of pan to slow cooker and add chicken broth. Cover and cook on low for 5-7 hours or high for 3-4.
Remove chicken and cover to keep warm. Add cream, mustard, lemon juice and cornstarch to slow cooker and whisk. Pour over chicken and serve. Or return all ingredients to slow cooker to keep warm and serve from slow cooker. Serves 8
