Creamy Indian Chicken Salad 2 boneliess skinless chicken breast halves 1 1/2 tsp olive oil 1/2 tsp coarse salt 2 tbs mayonnaise 2 tbs plain yogurt 3/4 tsp garam masala or curry powder 1 rib celery, chopped 1.2 cup halved red grapes 2 generous cups tender lettuce leaves, such as Boston or green or red leaf 2 tbs sliced almonds Heat grill or broiler. Brush chicken with oil. Sprinkle with salt. Grill, covered, over medium heat or coals 8 to 10 minutes or until no longer pink in center, turning once. Cool. Cut into 1/2-inch pieces. Meahwhile, whisk mayonnaise, yogurt and garam masala (or curry powder) in medium bowl. Add chicken, celery and grapes. Toss to combine. (You can make this in advance and refrigerate if you prefer.) Serve salad on lettuce leaves. Sprinkle with almonds. About 360 calories.
