Creamy Herb-Stuffed Potatoes
8 baking potatoes (4 to use later)
1 pkg spreadable garlic & herb cheese
Bake potatoes. Cut a deep X in top of each. Gently push ends toward center to open.
Top with cheese. Let the 4 extra cool, then wrap and refrigerate for future use.

Creamy Herb Mashed Potatoes
4 herb-stuffed potatoes
milk
butter
salt and pepper to taste
Microwave the potatoes on low for about 4 minutes (depending on your microwave), to just heat the potatoes. Then mash, with skin on, and prepare as you normally prepare mashed potatoes adding remaining ingredients and heating thoroughly on the stove over medium heat.
