ParticipantCreamy Goat Cheese Egg Salad
6 hard-cooked eggs
2 oz soft goat cheese, crumbled
6 tbs mayonnaise
2 tsp green onions, chopped fine
2 tsp tarragon, chives, chervil, dill, or basil (you decide!)
1/8 tsp sal
dash pepper
Place eggs in medium bowl. Mash with pastry blender or fork until crumbled. Add cheese, mash until combined.Stir in mayonnaise until smooth. Stir in all remaining ingredients. Spread mixture on bread (toasted if desired).
Serve with favorite cup of soup or side salad.

At one time we had dairy goats. We could make the goat cheese cheaply.Now that we no longer have goats, we have to buy our goat cheese like the majority of poeple do.
I have not been able to find it for less that 2 dollars per ounce in the stores. Actually it was 2 dollars per ounce 2 years ago.It may be even more now, everything else is.

Participantouch! I buy when it goes on sale (I only buy it on sale) here in NC, for $2.99/8 oz pkg. we actually have a lot of goats in our state!
LOL! a good substitute would be generic cream cheese — on sale of course;-) not the same flavor, as I’m sure you would know, but still a wonderful change from your average egg salad;-)
