Creamy Garlic Chicken Pasta
75-oz rotini Pasta
3/4 cup broccoli (fresh or frozen)
1/4 cup carrots, grated or sliced
1/4 tbs unsalted butter
1 boneless, skinless chicken breast, chopped
1 clove garlic, finely chopped
1 can condensed cream of chicken soup
1/4 cup milk, 2%
1/4 cup water
3/4 oz cream cheese, cubed and softened
1/4 cup grated parmesan cheese
salt and pepper to taste
Cook pasta as directed on box, adding in broccoli during the last 2 minutes.
Drain well. In a large skillet, melt butter over medium heat. Add chicken, garlic, salt, and pepper.
In a medium bowl, whisk soup, milk, water, and cream cheese until smooth. Pour soup mixture onto chicken and add carrots. Bring to a boil and reduce to low heat.
Simmer until chicken is fully cooked. Remove from heat and stir in Parmesan. Pour mixture over pasta and toss together.
