This is a simple recipe that makes a yummy side dish for grilled meats or even as a light lunch.
2 Large cucumbers, thinly sliced
1 tsp salt
1 (12 oz) container sour cream
1/2 small red onion, very thinly sliced
1/4 cup fresh dill, lightly chopped
2 tablespoons white wine vinegar
2 garlic cloves, minced
1 tsp sugar
1 tsp coarsely ground pepper
Wash the cucumbers and thinly slice them into a bowl. We use a mandolin slicer for this. Sprinkle them with the salt and toss to coat.
Let them rest for about 15 minutes, then spread them out onto a layer of paper towels and blot them dry.
In a bowl mix the remaining ingredients together, then add the cucumbers, folding them in until they are completely coated. Refrigerate for an hour prior to serving to allow the flavors to mingle.
If you wanted to cut the calories a bit you could use non-fat sour cream or plain greek yogurt.

This sounds so yummy! A friend used to make something similar, but I think that she used evaporated milk instead of sour cream. Any thoughts…anyone…?
