Here’s another recipe to use up some of that leftover turkey… Creamy Broccoli Turkey Soup 16 oz pkg frozen, chopped broccoli (unless you have bunches leftover;-D) 4 small sweet onions, chopped (or one very large) 2 cups chopped, cubed, or shredded turkey 1 tbs butter 1/4 cup flour 2 cups chicken broth 1 cup heavy crem salt and pepper to taste Melt butter in a large pot over medium heat. Add onion, stir and saute for 2 minutes. Add turkey and saute for another 2 minutes. Meanwhile, mix broth and flour in a bowl. Stir in the broth/flour mixture. Simmer until soup thickens, then add cream. Stir occasionally until soup reaches a nice thick consistency. Season with salt and pepper. Serve hot with crusty bread.
