Creamed Eggs and Ham
1 cup cooked ham, cut in julienne strips
2 tbs butter
1/4 cup thinly sliced green onion
1/2 cup chopped green or red bell pepper, optional
2 tbs flour
2 cups milk
salt and pepper, to taste
1/2 tsp ground mustard
3 hard-cooked eggs, chopped
1 hard-cooked egg, sliced
1 1/2 cups cooked asparagus, cut into 1-inch pieces
hot baked biscuits, split, or baked puff pastry shells
In a heavy saucepan over medium heat, lightly brown ham in butter.
Add the green onion. Cook, stirring, until vegetables are tender. Add flour and cook ,stirring, until flour is absorbed and mixture is smooth, about 1 to 2 minutes.
Gradually add the milk, stirring constantly, until thickened and smooth. Season with salt and freshly ground pepper, to taste, and stir in the ground mustard. Add the 3 chopped eggs and asparagus.
Stir gently and heat through.
Serve over hot split biscuits or puff pastry shells with a few slices of hard-cooked eggs on the side. Serves 6.
