      Cranberry Loaf:054:
      6 oz cream cheese, softened
      1 egg
      1 tbs plus 1 cup sugar
      2 tbs orange-flavored liqueur
      2 cups all-purpose flour
      1 1/2 tsp baking powder
      1/2 tsp baking soda
      1/2 tsp salt
      3/4 cup apple juice
      1/4 cup melted butter
      1 egg, beaten
      1 1/2 cups chopped fresh cranberries
      1/2 cup chopped walnuts
      Heat oven to 350 degrees F. Spray 9X5X3-inch loaf pan with nonstick cooking spray. Lightly flour. In small bowl, beat cream cheese at medium speed until light and fluffy. Add egg, 1 tbs sugar and liqueur. Blend well and set aside. In large bowl, mix together flour, 1 cup sugar, baking powder, baking soda and salt. Stir in apple juice, butter and egg. Fold in cranberries and walnuts. Spoon one-half of batter into prepared pan. Spoon cream cheese mixture evenly over batter. Top with remaining batter. Bake 65 to 75 minutes or until golden brown and toothpick inserted near center comes out clean. Cool 15 minutes. Remove from pan. Cool on wire rack. Store in refrigerator tightly wrapped in plastic. 16 slices = about 220 calories.
